Bean spread

  • 400g Cannellini beans drained, rinsed
  • 2 Tbsp Olive oil
  • Lemon zest
  • Salt and pepper to taste
  • Optional: sprinkle of chilli flakes

Mushrooms

  • 200g White button mushrooms chopped
  • 2 Garlic cloves
  • Salt and pepper to taste
  • Optional: sprinkle of chilli flakes

Preparation

  1. Make the bean spread by blitzing the cannellini beans, olive oil, lemon zest, lemon juice, garlic and seasoning in a food processor.
  2. Combine mushrooms, garlic and seasoning and fry until cooked.
  3. Grill Vogel’s to your desired toastiness.
  4. Plate up by layering the garlic mushrooms over the bean spread with a sprinkle of fresh thyme.
